Anyone else really start suffering when the weather changes?? Fall has slowly been trickling in over here in Philadelphia, and I can just feel my body trying to fight off a cold. I’ve been loading up on whole foods and golden milk, but would love to hear from y’all in the comments below with any other immune-booster suggestions!
Speaking of whole foods, I recently discovered Thunderbird Real Food Bars and let me just tell you: I’m obsessed. The food bars are made from simple ingredients, with no crazy additives so you can feel good about consuming. (This isn’t a sponsored post, I’m just that much of a fan.)
In the spirit of saving money, I decided to recreate one of my fave snacks from their Fruit & Nut line. They taste almost like fig newtons and carrot cake had babies. I ate everything I made almost immediately, so I’ll certainly be experimenting with this more! Hope you enjoy!
Raw Carrot Date Bites

INGREDIENTS:
equal parts:
carrot
dates*
figs*
cashews
chocolate chips
*I used dried figs and dates. I’m not sure how this recipe will end up with fresh.
DIRECTIONS:
- I have a magic bullet, so I blended each ingredient separately, then combined and pulsed them together. I find that doing so made it pretty easy to eyeball measure everything into equal amounts. If you have a food processor you can likely combine everything from the start!
- Take the mixture and roll into balls. (Good luck trying not to eat every one you create.)
- Pop into the fridge to chill, then eat!
Depending how much you make (because everything is equal parts, you can basically adjust en masse) , you can also line a baking sheet and press out the mixture into bars!

Yum! Looks like a great way to work some veggies into snack time. I also like that there’s no refined sugar, other than a little chocolate (because who I am kidding, I could never give up chocolate).

I’m constantly looking for something good to do with Dates. This is a great idea. I bet the sweetness in the dates and the crunchiness of the carrots pair really well!
